After a couple of months of fermentation, I've now added the finings to me mead, meaning it's nearly bottling time.
NB. Finings are tint little bits of fish guts that help to clear the crap out of brewed things.
I took the opportunity to sample a bit - it's sweeter than the last batch, (possibly as a result) tastes less alcoholic, and has a hint, but not much more, of apples.
If I can get a bottle cap machine this weekend, I might have them conditioned enough to make this birthday mead...
